Cherry Gazpacho: the recipe of the summer
At Nora Real Food, we’re all about seasonal recipes that are easy to prepare and give us the energy we need throughout the day. And if they’re original too, even better! This cherry gazpacho is all of that and more: a summery recipe you’ll love for both its taste and how convenient it is to take to work or enjoy at home during your midday break.
We’re taking advantage of the fact that cherries and tomatoes are at their peak to create a dish that’s fresh, nutritious, and full of flavor. It’s ideal as a starter, a light lunch, or even a healthy snack between meals. Plus, thanks to its liquid format, it’s very easy to carry in a jar or bottle, making it a perfect office lunch option.
Ingredients (serves 4)
🍒 300 g of pitted cherries (the riper, the better). You can use a cherry pitter or remove the pits with a knife.
🍅 1 kg of ripe plum tomatoes
🧅 ½ onion
🌿 20 g fresh basil + 10 g fresh mint
🫒 120 ml extra virgin olive oil (EVOO)
🍏 50 ml apple cider vinegar
🍊 150 ml fresh orange juice
🧂 Salt to taste
For garnish:
- Crumbled feta cheese
- Lemon zest
- Orange zest
Step-by-step
- Wash the tomatoes and cherries well. Make sure to remove the pits from the cherries.
- Add all the ingredients to a high-speed blender or food processor.
- Blend until the texture is very smooth and uniform.
- Strain through a fine sieve if you want it even smoother.
- Chill in the fridge for at least one hour before serving.
- To finish, garnish with crumbled feta, lemon zest, and orange zest just before serving.
